Recipe: “The best Smashed Avo on Toast”

Ingredients

Wholewheat or rye bread

Boiled egg (optional)

¼ of an avocado

Red peppers (de seeded and chopped)

A squeeze of lemon juice

1 teaspoon of Greek yoghurt


Method

Smash your avo, adding in the lemon juice, Greek yoghurt and some herbs. After lightly toasting your bread then add the smashed avo on top.

You can top with a boiled egg (or put it on the side!).

Boiled eggs are high in protein.

Avocado is full of good fats!

You also serve with some chopped peppers and cherry tomatoes. Yum!
