Recipe: “Classic Spaghetti Bolognese with a twist”

Ingredients:

1 packet of spaghetti

1 onion

1 tsp of freshly crushed garlic

500g of free range lean mince

1 tbsp of mixed herbs (Italian, basil, oregano etc)

1 tbsp of brown sugar

2 carrots

3 -4 small baby marrows

1 cup of water

1 can of tinned tomatoes

1 sachet of tomato paste

Olive oil

1 tsp of crushed salt

Cream (optional)


Method

In a large pot heat some olive oil. Add your chopped onion and garlic.

Gently fry until the onions are translucent.

Grate your zuchinni and peeled carrots and add them to the garlic and onions.

Leave to cook on low heat until the veg are cooked.

You can add a little water if the oil starts to dry up.

Add your mince and brown.

Once your mince is brown you can add your herbs, salt, tinned tomatoes, tomato paste and brown sugar.

Add a cup of water, turn down to a low heat and simmer for at least 1.5 hours.

Before serving you can add cream (optional).

If you choose not to use cream you can add a dollop of Greek yoghurt for extra taste and protein!


Serve with freshly cooked spaghetti and a sprinkle of grated cheese or parmesan.
