Recipe: “Chicken wraps with veggies”


Ingredients

2 skinned chicken breasts

4 large wraps

1 handful of lettuce (Iceberg is preferable)

4 tomotoes cut into strips

1 tbsp of olive oil for frying

4 tbsp of mayo (optional)

Salt & Pepper

Ingredients for the marinade:

1 tbsp of crushed garlic

1 tbsp of lemon juice

1 tbsp of organic honey

1 tbsp of low sodium soy sauce

½ tbsp of brown sugar

2 tbsp of canola sunflower oil

1 tbsp of olive oil


Method

Using a sharp knife make cuts in the chicken and then season with salt and pepper. Take the marinade ingredients and mix together. Add the chicken to the marinade and let it soak in the juices for about 30 minutes in the fridge.

Heat a pan with the olive oil until hot and then add the chicken breasts. You should allow them to grill for about 3 minutes each side or until cooked.

Cut the cooked chicken into strips and set aside. Take your wraps and pop them into the microwave for about 20 seconds or alternatively put them in the oven for a minute or two. Spread some mayo on each wrap, then add your chicken strips. You can then add your lettuce and tomatoes (all in one line and leaving some space along the edges). Then roll up your wraps and cut in half.
